Banana Bread Recipe:

This recipe was developed over the years by my husband, who is well-known for his banana bread. He makes it frequently, and it always sells out right away! Our preferred method for ensuring that overripe bananas don't go to waste is easy to create. It's incredibly moist and a fantastic portable breakfast. Even banana muffins were made using this recipe.

I prefer banana bread to fruit cake any day, and this loaf keeps its moisture for days, making it a thoughtful and delectable gift choice for the holidays.

This simple recipe for banana loaf, which combines banana bread with drizzle cake, bakes up quickly and can be frozen. It is excellent for using bananas that are excessively ripe.

 

Ingredients


140g softened butter, plus additional butter for the tin

140g caster sugar

2 large eggs, beaten

140g self-raising flour

1 tsp baking powder

2 very ripe bananas, mashed

50g icing sugar

handful of dried banana chips, for decoration

Method

STEP 1

Heat oven to 180C/160C fan/gas 4.

STEP 2

Butter a 2-lb loaf pan and line the base and sides with baking parchment.

STEP 3

Cream 140 g softened butter and 140 g caster sugar until light and fluffy, then slowly add 2 beaten large eggs with a little of the 140 g flour.

 

STEP 4

Fold in the remaining flour, 1 teaspoon baking powder, and 2 mashed bananas.

STEP 5

Pour the mixture into the prepared tin and bake for about 50 minutes, or until cooked through. Check the loaf at 5-minute intervals from 30 to 40 minutes in the oven using a skewer (it should be able to be inserted and removed). The baking time will vary depending on the loaf's shape.

STEP 6

After 10 minutes, remove from the tin and cool on a wire rack.

STEP 7

To make runny icing, combine 50 g of icing sugar with 2-3 tsp of water.

STEP 8

On top of the cake, drizzle some icing and scatter some banana chips for decoration.
